Yummy Turkey Meatballs
from Cooking Fun by Rae Grant
My brother Jay’s oven-baked meatballs are delicious. Serve them to a crowd with tomato sauce for snacking or serve with spaghetti for a fabulous family meal.
1 tablespoon vegetable oil (for greasing the pan)
1 egg
5 tablespoons grated Pecorino-Romano cheese
1⁄4 cup bread crumbs
3 tablespoons ketchup
1⁄4 teaspoon salt
1⁄4 teaspoon black pepper
1 pound ground turkey
3 garlic cloves, chopped fine
1⁄4 cup onion, chopped fine
2 cups tomato sauce
1. Set the rack in the middle of the oven. Preheat oven to 350 degrees. Use vegetable oil to grease a baking sheet or shallow baking pan.
2. Combine the egg, grated cheese, bread crumbs, ketchup, salt, and pepper in a bowl. Add the turkey and mix with clean hands or large spoon until well combined.
3. Peel and chop fine the garlic cloves and add to mixture. Peel an onion and grate into the bowl using the medium-size holes of a box grater. (Be careful not to scrape your fingers as you do this.)
4. With clean hands, shape the turkey mixture into balls, about 2 inches across. Arrange about 1⁄2 inch apart in the prepared pan. Bake for 25 minutes, or until browned. (You don’t need to turn these meatballs.)
5. Using oven mitts, remove pan from oven. Set on a rack to cool. Pour tomato sauce into a medium saucepan and use tongs or spatula to place meatballs in the sauce. Turn heat on medium-low and cook until sauce thickens and flavors blend together. Transfer meatballs and sauce to a serving bowl and serve with toothpicks or over spaghetti.
